Crockpot Chicken and Noodles
I am trying a recipe I got offline, Crockpot Chicken and Noodles. I made some changes to it. I served it with some biscuits.
1 can carrots
1 can chicken stock
1 can corn
1 can cream of chicken soup
1 can cream of mushroom soup
1 package noodles cooked
1 teaspoon sugar
1/2 teaspoon garlic powder
1/4 cup flour
4 chicken breasts boned
8 ounce sour cream
- Remove bone from chicken breasts and cut into strips.
- Place in bottom of crockpot.
- Combine soups, sugar and garlic powder.
- Pour over chicken.
- Cover and cook on high 3-4 hours or low 7-9 hours.
- Combine flour and sour cream and stir into cooked chicken mixture.
- Continue cooking 25-30 minutes or until thickened.
- Serve over hot lightly buttered noodles.

Kelly's Favorite Salad
1 head of lettuce cut into shreds
4 large tomatoes chopped into nice sized chunks
2 cucumbers chopped into nice sized chunks
3 carrots cut into slices
3 boiled eggs chopped
1 ½ cup shredded cheese
1. Combine all of the ingredients into a salad bowl
2. Stir until mixed thoroughly
3. Serve with your favorite dressing (dress at the table)

Mashed Potato Casserole
2 pounds peeled potatoes
8 ounces pkg. cream cheese
1 cup sour cream
1 teaspoon salt
1/8 teaspoon pepper
4 tablespoons butter
1 egg
¼ cup chopped chives (optional)
- Cook potatoes in boiling, salted water until tender
- Drain
- Mash potatoes in large bowl with electric mixer.
- Add cream cheese, sour cream, salt, pepper, butter, and egg
- Beat at high speed until smooth and light
- Stir in chives (optional)
- Bake at 350 degrees for 30 minutes or until golden

Fried Chicken: Recipe
1 gallon cold water
1 c. kosher salt
1 c. sugar
4 to 5 pounds chicken
1 c. all-purpose flour
¾ c. buttermilk
½ t. cayenne pepper
Oil for deep frying
- Combine water, salt, and sugar in a large bowl
- Add chicken
- Cover and refrigerate overnight (30 minutes will be okay if you don't have time to do it overnight)
- Drain and pat dry
- Combine flour, buttermilk, and pepper in a mixing bowl
- Coat each piece of chicken
- Deep fry in oil at 355 degrees for 8 minutes or until juices run clear.

Cheese Fries
32-oz. pkg. frozen French Fries
½ c. green onions, sliced
½ c. bacon, crisply cooked and crumbled
2 T. chili powder
1 c. shredded Cheddar cheese
1. Bake French Fries according to package directions
2. Once done, sprinkle with chili powder, onion, bacon, and cheese
3. Broil for 2 minutes or until cheese is melted

Easy Mini Meat Loaves: Recipe
12-oz. tube refrigerated biscuits
1-1/2 lbs. ground turkey
1 c. catsup, divided
½ c. onion, chopped
1 egg, beaten
¼ c. quick-cooking oats, uncooked
1 c. shredded Cheddar cheese
- Divide and press biscuit dough across the bottom and up the sides of 10 greased muffin cups; set aside.
- Combine ground turkey, ½ cup catsup, onion, egg, and oats in a medium mixing bowl; mix well.
- Form into 10 balls
- Place one in each biscuit cup
- Spread remaining catsup on the tops
- Sprinkle with cheese
- Bake at 350 degrees for 30 minutes.

Corn Bread: Recipe
1 box Jiffy cornbread
2 teaspoons sugar
- Follow directions on the cornbread box for cornbread muffins.
- Add the sugar.
- Mix.
- Place in the pan.
- Bake according to the directions on the box.

Green Beans: Recipe
1 ½ cup chicken stock
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon parsley
2 cans of green beans (Cut or French will work)
3 tablespoons butter
- Open cans of green beans.
- Drain liquid from green beans.
- Place green beans in a pot.
- Pour chicken stock into the pot.
- Put butter and the dry ingredients into the pot.
- Bring to a boil, stirring occasionally.
- Let bowl for 10 minutes.
- Turn heat to medium and let simmer for 20 minutes.
The butter may be reduced or taken out.

Pork Chops & Potato: Recipe
1 ½ cups chicken stock
1 ½ cups Vidalia Creamy Onion Dressing
1 large onion
1 teaspoon paprika
1 teaspoon salt
1 teaspoon sugar
2 baking potatoes
3 tablespoons garlic powder
3 tablespoons onion powder
3 tablespoons parsley
4 pats of butter
6 Pork Chops
- Preheat oven to 300 degrees.
- Cut up onion into strips.
- Peel and slice potatoes into thick fries.
- Slightly rinse the pork chops.
- Place pork chops, onions, and potatoes into a bowl.
- Pour all dry seasonings over the mixture above.
- Mix the mixture until everything is covered in the dry ingredients.
- Place mixture into a big baking pan.
- Pour the chicken stock over the mixture, making sure to cover everything.
- Place the pats of butter on the top of the meat, potatoes, and onions.
- Bake in the oven for 30 minutes.
- After 30 minutes, remove pan from oven and pour the Vidalia Creamy Onion Dressing over the meat, potatoes, and onions.
- Stir the mixture.
- Place the pan bake into the oven and bake for 45 minutes. (You can bake the dish until the potatoes and meat is as tender as you want them to be.)
The butter may be left out if you want it to be.

Pizza! My Kids Are Happy
I didn't feel like cooking tonight, so I ordered pizza. My kids are very happy.
My husband grumbled a little, but I made him a big salad and he didn't grumble that long.

Leftovers
Tonight we are having leftovers. Most likely, everyone will eat The Neatest Joes. I usually double the recipe when I make it.

The Neatest Joes: Recipe
This is a recipe that I created. It is a take on Sloppy Joes, but they are neat.
1 pound ground turkey
1 (8 ounce) can spaghetti sauce (you can add more sauce if you would like the Joes to be juicer)
2 teaspoons ketchup
1 teaspoon mustard
3 teaspoons dark corn syrup
2 teaspoons worcestershire sauce
2 teaspoons onion powder
2 teaspoons garlic powder
2 teaspoons Lawry’s seasoning salt
6 hamburger buns
- Cook ground turkey in skillet until browned.
- Pour off fat.
- Add spaghetti sauce, ketchup, mustard, corn syrup, worcestershire sauce, onion powder, garlic powder, and seasoning salt to meat and heat through.
- Serve on hamburger buns.
You can add cheese, onions, or any other condiment that you want to.

Tonight I made the Neatest Joes. It is my take on Sloppy Joes. They were named the Neatest Joes by my daughter Gina when she said, “Mom, these are the neatest sloppy joes I have ever seen.

Enchilada Pie: Recipe
This is my special recipe. It has been altered to my specifications.
½ pound of ground turkey
½ pound of ground pork
2 pkgs. McCormick Sauce Mix
1 ½ cups Chicken Stock
1 can (8 oz.) tomato sauce
12 corn tortillas
1 cup Kraft Four Cheese (Mexican) (You can use more or less if you like.)
½ cup onions
- Brown turkey and pork in a large skillet. Drain the fat.
- Place one package Sauce Mix and chicken stock in medium sauce pan. Bring to a boil. Reduce heat and simmer until sauce thickens. Be sure to stir occasionally.
- Brown ½ cup of onions in skillet.
- Mix the brown meat mixture and onion together in the skillet. Empty half of the remaining package of Sauce Mix into the meat and onion mixture. Cook this mixture for a few minutes. If you want to, you can add ¼ cup of chicken stock into the mixture.
- Coat four of the tortillas in the Sauce Mix. Place them on the bottom of the pan.
- Place some of the meat mixture on top of the tortillas.
- Place some cheese on top of the meat mixture.
- Repeat the layers again.
- With the last four tortillas on top of the cheese mixture. Place the remaining Sauce Mix on top of the tortillas. Place the last of the cheese on top of the Sauce Mix. (I usually put a lot of cheese on top of the last layer.)
- Place in the oven and bake for 15 minutes at 350 degrees.
You can top your enchiladas with whatever condiments that you would like.
