2/08/2006 Enchilada Pie: Recipe

This is my special recipe.  It has been altered to my specifications.

½ pound of ground turkey
½ pound of ground pork
2 pkgs. McCormick Sauce Mix
1 ½ cups Chicken Stock
1 can (8 oz.) tomato sauce
12 corn tortillas
1 cup Kraft Four Cheese (Mexican)  (You can use more or less if you like.)
½ cup onions

  1. Brown turkey and pork in a large skillet.  Drain the fat.

  2. Place one package Sauce Mix and chicken stock in medium sauce pan.  Bring to a boil.  Reduce heat and simmer until sauce thickens.  Be sure to stir occasionally.

  3. Brown ½ cup of onions in skillet.

  4. Mix the brown meat mixture and onion together in the skillet.  Empty half of the remaining package of Sauce Mix into the meat and onion mixture.  Cook this mixture for a few minutes.  If you want to, you can add ¼ cup of chicken stock into the mixture.

  5. Coat four of the tortillas in the Sauce Mix.  Place them on the bottom of the pan.

  6. Place some of the meat mixture on top of the tortillas.

  7. Place some cheese on top of the meat mixture.

  8. Repeat the layers again.

  9. With the last four tortillas on top of the cheese mixture.  Place the remaining Sauce Mix on top of the tortillas.  Place the last of the cheese on top of the Sauce Mix.  (I usually put a lot of cheese on top of the last layer.)

  10. Place in the oven and bake for 15 minutes at 350 degrees.

You can top your enchiladas with whatever condiments that you would like.
